| Chocolate Surprise Cake |

| Ingredients: |
| 2 1/4 | cups | Flour |
| 1 | tsp | Baking Soda |
| 1 | tsp | Baking Powder |
| 1 1/2 | cups | Sugar |
| 2/3 | cups | Shortening or Butter |
| 3 | | Eggs |
| 1 1/4 | tsp | Vanilla |
| 1/4 | tsp | Salt |
| 1/2 | cups | Cocoa |
| 1 | cup | Water or Beer |
| 1/2 - 2/3 | cups | Sauerkraut, chopped, rinsed and drained |

| Instructions: |
| 1. | Cream together sugar and shortening. |
| 2. | Add eggs, mix well, then add vanilla, salt and cocoa. |
| 3. | Sift together flour, baking soda, and baking powder. |
| 4. | Alternating, add flour mixture and water. |
| 5. | Fold in kraut by hand. |
| 6. | Bake in greased and floured pan for 35-45 minutes at 375 degrees. |
| 7. | (This will make one 9x13 sheet cake or a two-layer cake.) |
| 8. | Frost with your favorite kind of icing. |
