Peanut Butter Pie |
(One of Grandma's Favorites!) |

Ingredients: |
3/4 | cups | powdered sugar |
1/2 | cups | peanut butter |
1/2 | cups | Sugar |
3 | tbsp | corn starch |
1/4 | tsp | salt |
2 | cups | milk |
2 | | egg yolks, slighty beaten |

2 | | egg whites |
1/4 | tsp | cream of tartar |
1/4 | tsp | vanilla |
1/4 | cups | sugar |
1 | | pie shell |

Instructions: |
1. | Mix together powdered sugar and peanut butter until it crumbles. |
2. | Put all but approx 2 tablespoons of the mixture in bottom of baked pie shell |
3. | Mix and cook sugar, cornstarch, salt, milk and egg yolks until thick, stirring constantly. |
4. | Pour on top of crumbs. |
5. | Meringue: beat egg whites and cream of tartar until foamy, |
6. | Beat in sugar 1 tablespoon at a time, continue beating until stiff and glossy. |
7. | Do not underbeat. Beat in vanilla. |
8. | Put meringue on top of filling and then sprinkle with remaining peanut butter crumbs. |
9. | Bake at 350 until meringue is golden brown. |
