| Ingredients: |
| 1 | cup | Shortening |
| 2 | cups | Sugar |
| 2 | | Eggs |
| 2 | cups | Grated or Blended Zucchini |
| 2 | tsp | Salt |
| 2 | tsp | Vanilla |
| 4 | cups | Flour |
| 2 | tsp | Cinnamon |
| 2 | tsp | Baking Powder |
| 2 | tsp | Baking Soda |

| Instructions: |
| 1. | Cream together shortening and sugar |
| 2. | Put in eggs and zucchini |
| 3. | Add rest of ingredients and mix well |
| 4. | Can add nuts, chocolate chips or raisins if desired |
| 5. | Drop on a cookie sheet and bake for 8 - 10 minutes at 375 degrees |
