Low Fat Chicken Gumbo

Ingredients:
3cups chicken broth
1/2cups onion, chopped
1/4cups celery, chopped
10oz cut frozen okra
16oz tomatoes
1/2tsp salt
1/8tsp pepper
1/4cups rice, uncooked
2cups chicken, cooked and dices
1/8tsp cayenne pepper
 
Instructions:
1.  Skim fat from cold chicken broth. Heat broth to boiling.
2.  Add vegetables, seasonings, rice and chicken.
3.  Cover and cook slowly 15 minutes, until vegetables and rice are tender.
