Low Fat Chicken Gumbo |

Ingredients: |
3 | cups | chicken broth | 1/2 | cups | onion, chopped | 1/4 | cups | celery, chopped | 10 | oz | cut frozen okra | 16 | oz | tomatoes | 1/2 | tsp | salt | 1/8 | tsp | pepper | 1/4 | cups | rice, uncooked | 2 | cups | chicken, cooked and dices | 1/8 | tsp | cayenne pepper |

Instructions: |
1. | Skim fat from cold chicken broth. Heat broth to boiling. | 2. | Add vegetables, seasonings, rice and chicken. | 3. | Cover and cook slowly 15 minutes, until vegetables and rice are tender. |
