| Minute Tapioca |
| (One of Grandma's Favorites!) |

| Ingredients: |
| 3 | tbsp | minute tapioca |
| 3 | tbsp | sugar |
| 2 | cups | milk |
| 1 | | egg yolk |
| 1/8 | tsp | salt |
| 1 | | egg white |
| 2 | tbsp | sugar |
| 3/4 | tsp | vanilla |

| Instructions: |
| 1. | Mix tapioca, sugar, milk, salt and egg yolk in sauce pan. Let stand five minutes |
| 2. | Cook on medium heat stirring constantly until mixture comes to full boil. |
| 3. | Remove from heat. |
| 4. | Beat one egg white until foamy, gradually beat in 2 tbsp of sugar beating to soft peak. |
| 5. | Gradually add mixtures together stirring vigorously to blend. |
| 6. | Add vanilla. Let cool 20 minutes. |
| 7. | Stir and serve warm or chilled. |
