Minute Tapioca |
(One of Grandma's Favorites!) |

Ingredients: |
3 | tbsp | minute tapioca |
3 | tbsp | sugar |
2 | cups | milk |
1 | | egg yolk |
1/8 | tsp | salt |
1 | | egg white |
2 | tbsp | sugar |
3/4 | tsp | vanilla |

Instructions: |
1. | Mix tapioca, sugar, milk, salt and egg yolk in sauce pan. Let stand five minutes |
2. | Cook on medium heat stirring constantly until mixture comes to full boil. |
3. | Remove from heat. |
4. | Beat one egg white until foamy, gradually beat in 2 tbsp of sugar beating to soft peak. |
5. | Gradually add mixtures together stirring vigorously to blend. |
6. | Add vanilla. Let cool 20 minutes. |
7. | Stir and serve warm or chilled. |
