Minute Tapioca
  (One of Grandma's Favorites!)

Ingredients:
3tbsp minute tapioca
3tbsp sugar
2cups milk
1 egg yolk
1/8 tsp salt
1 egg white
2tbsp sugar
3/4tsp vanilla
 
Instructions:
1.  Mix tapioca, sugar, milk, salt and egg yolk in sauce pan. Let stand five minutes
2.  Cook on medium heat stirring constantly until mixture comes to full boil.
3.  Remove from heat.
4.  Beat one egg white until foamy, gradually beat in 2 tbsp of sugar beating to soft peak.
5.  Gradually add mixtures together stirring vigorously to blend.
6.  Add vanilla. Let cool 20 minutes.
7.  Stir and serve warm or chilled.
