Mix-Easy White Cake

Ingredients:
2cups sifted S.D. cake flour (a)
2 1/2tsp baking powder (a)
3/4tsp salt (a)
1cup sugar (a)
1/2cups shortening
3/4cups milk
1tsp vanilla
3 egg whites (b)
1/4cups sugar (b)
 
Instructions:
1.  measure into sifter the (a) ingredients
2.  measure the shortening into mixing bowl
3.  measure milk and vanilla into cup
4.  have ready: 3 egg-white meringue (b)
5.  (b) beat 3 egg whites until foamy
6.  (b) add 1/4 cup sugar gradually, beating until forms soft peaks
7.  stir shortening just to soften, sift in dry ingredients (a)
8.  add milk and vanilla, mix until all flour is dampened
9.  beat 2 minutes, add meringue mixture and beat 1 min
10.  bake at 375 deg for 25 min (layers) or 30 min (loaf cake)
