Pumpkin Roll |

Ingredients: |
3 | | eggs |
1 | cup | sugar |
2/3 | cups | pumpkin |
1 | tsp | lemon juice |
3/4 | cups | flour |
1 | tsp | baking powder |
2 | tsp | cinnamon |
1 | tsp | ginger |
1/2 | tsp | nutmeg |
1/2 | tsp | salt |
1/2 | cups | chopped nuts |

Instructions: |
1. | beat eggs on high speed 5 minutes |
2. | gradually beat in sugar |
3. | stir in pumpkin and lemon juice |
4. | mix all dry ingredients |
5. | fold into pumpkin |
6. | spread into grease and floured 15" x 10" x 1" pan |
7. | bake 375 degrees for 15 minutes |
8. | turn onto towel sprinkled with powdered sugar |
9. | roll up and cool in refrigerator |
