| Pumpkin Roll |

| Ingredients: |
| 3 | | eggs |
| 1 | cup | sugar |
| 2/3 | cups | pumpkin |
| 1 | tsp | lemon juice |
| 3/4 | cups | flour |
| 1 | tsp | baking powder |
| 2 | tsp | cinnamon |
| 1 | tsp | ginger |
| 1/2 | tsp | nutmeg |
| 1/2 | tsp | salt |
| 1/2 | cups | chopped nuts |

| Instructions: |
| 1. | beat eggs on high speed 5 minutes |
| 2. | gradually beat in sugar |
| 3. | stir in pumpkin and lemon juice |
| 4. | mix all dry ingredients |
| 5. | fold into pumpkin |
| 6. | spread into grease and floured 15" x 10" x 1" pan |
| 7. | bake 375 degrees for 15 minutes |
| 8. | turn onto towel sprinkled with powdered sugar |
| 9. | roll up and cool in refrigerator |
